Roasted Vegetable and Hummus Toast

- 4 slices bread
- 1 medium zucchini
- 1 medium bell peppers
- 2 medium carrots
- 1 cup hummus
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 2 tablespoons fresh parsley
