Ingredients

  • 1 cup quinoa
  • 1 can black beans
  • 1 avocado
  • 2 lime
  • 1 bunch cilantro
  • 1 red onion
  • 1 cup cherry tomatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 clove garlic
  • 1 teaspoon cumin

    Rinse 1 cup of quinoa under cold water to remove bitterness. In a medium saucepan, combine the rinsed quinoa with 2 cups of water and 1 teaspoon of salt. Bring to a boil over medium-high heat.

    Once boiling, reduce the heat to low, cover, and let simmer for 15 minutes or until all the water is absorbed. Remove from heat and let sit, covered, for 5 minutes.

    Fluff the quinoa with a fork and set aside to cool.

    While the quinoa is cooling, drain and rinse 1 can of black beans under cold water.

    Chop 1 red onion, 1 cup of cherry tomatoes, and 1 bunch of cilantro. Add these to a large mixing bowl.

    Once the quinoa has cooled, add it to the mixing bowl with the chopped vegetables and black beans.

    In a separate bowl, prepare the avocado dressing by blending 1 ripe avocado, the juice of 2 limes, 2 tablespoons of olive oil, 1 minced garlic clove, 1 teaspoon of cumin, and 1 teaspoon of black pepper until smooth.

    Pour the avocado dressing over the quinoa and vegetable mixture. Toss gently to combine all ingredients evenly.
