Deep-fried bread served with a spiced potato curry, a popular breakfast in many Indian households.

Ingredients

  • 2 cups whole wheat flour
  • 1 cup water
  • 1 teaspoon salt
  • 2 tablespoons oil
  • 3 medium potatoes
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 medium green chili
  • 1 inch piece ginger
  • 2 cloves garlic
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 2 tablespoons fresh cilantro
  • 4 cups oil for frying

    In a large mixing bowl, combine 2 cups of whole wheat flour, 1 teaspoon of salt, and 2 tablespoons of oil. Mix well.

    Gradually add 1 cup of water to the flour mixture, kneading to form a smooth and firm dough. Cover the dough with a damp cloth and let it rest for 30 minutes.

    While the dough is resting, prepare the Aloo Sabzi. Peel and chop 3 medium potatoes into small cubes.

    In a pan, heat 2 tablespoons of oil over medium heat. Add 1 teaspoon of cumin seeds and let them splutter.

    Add 1 medium green chili (finely chopped), 1 inch piece of ginger (grated), and 2 cloves of garlic (minced) to the pan. Sauté for about 2 minutes until fragrant.

    Add the chopped potatoes to the pan along with 1 teaspoon of turmeric powder, 1 teaspoon of coriander powder, and salt to taste. Mix well.

    Cover the pan and cook on low heat for about 15-20 minutes, stirring occasionally, until the potatoes are tender.

    Once the potatoes are cooked, add 1 teaspoon of garam masala and 2 tablespoons of chopped fresh cilantro. Mix and cook for another 2 minutes. Remove from heat.

    After the dough has rested, divide it into small balls (about 10-12). Roll each ball into a small circle, about 4 inches in diameter.

    In a deep frying pan, heat 4 cups of oil on medium-high heat until hot (about 350°F).

    Carefully slide one puri at a time into the hot oil. Fry until they puff up and turn golden brown, about 1-2 minutes on each side.

    Remove the puris with a slotted spoon and drain on paper towels. Repeat the process for the remaining puris.

    Serve the hot puris with the Aloo Sabzi and enjoy your delicious Indian breakfast!
