
Pupelių Sriuba - Bean Soup
A thick and hearty bean soup with smoked meats and vegetables, ideal for a filling meal.
Ingredients
- 1 cup white beans
- 8 oz smoked sausage
- 2 medium carrots
- 1 large onions
- 3 cloves garlic
- 1 teaspoon thyme
- 4 cups vegetable broth
- 1 leaf bay leaf
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons parsley

Instructions

Rinse and soak the white beans in water for at least 6 hours or overnight.

In a large pot, heat 2 tablespoons of olive oil over medium heat.

Add 1 large chopped onion and sauté for about 5 minutes until translucent.

Add 2 medium chopped carrots and 3 minced garlic cloves, and cook for an additional 3 minutes.

Slice the 8 oz of smoked sausage and add it to the pot. Cook for about 5 minutes, stirring occasionally.

Drain the soaked beans and add them to the pot along with 4 cups of vegetable broth.

Add 1 teaspoon of thyme, 1 bay leaf, 1 teaspoon of salt, and 1 teaspoon of black pepper.

Bring the mixture to a boil, then reduce the heat to low and cover the pot.

Simmer for 1 to 1.5 hours, or until the beans are tender, stirring occasionally.

Once the beans are cooked, remove the bay leaf and adjust seasoning if necessary.

Serve hot, garnished with 2 tablespoons of chopped parsley.
