
Pulled Chicken Sandwiches with Vinegar Sauce
Juicy pulled chicken smothered in tangy vinegar sauce, served on a soft bun with coleslaw. Perfect for a BBQ lunch!
Ingredients
- 1 4-5 lbs whole chicken
- 1 cup apple cider vinegar
- 1 cup brown sugar
- 1 1/4 cup yellow mustard
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 4 cups coleslaw mix
- 1 cup mayonnaise
- 6 pieces buns
- 1 teaspoon salt
- 1 cup water

Preheat your oven to 350°F (175°C).

In a large bowl, mix together the apple cider vinegar, brown sugar, yellow mustard, black pepper, garlic powder, onion powder, and salt to create the vinegar sauce.

Place the whole chicken in a roasting pan and pour half of the vinegar sauce over it, making sure to coat the chicken evenly.

Add 1 cup of water to the bottom of the roasting pan to keep the chicken moist during cooking.

Cover the roasting pan with aluminum foil and bake in the preheated oven for 1.5 to 2 hours, or until the internal temperature of the chicken reaches 165°F (75°C).

Remove the chicken from the oven and let it rest for 15 minutes before shredding it with two forks.

While the chicken is resting, prepare the coleslaw by combining the coleslaw mix and mayonnaise in a separate bowl. Mix well and set aside.

Once shredded, mix the remaining vinegar sauce into the pulled chicken to enhance the flavor.

To assemble the sandwiches, place a generous portion of pulled chicken on the bottom half of each bun, add a scoop of coleslaw on top, and cover with the top half of the bun.
