
Pomidorų Sriuba - Tomato Soup
A vibrant tomato soup flavored with fresh herbs and served with a dollop of sour cream, perfect for a comforting meal.
Ingredients
- 4 cups fresh tomatoes
- 1 medium onion
- 3 cloves garlic
- 1 cup fresh basil leaves
- 4 cups vegetable broth
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 cup sour cream
- 1 teaspoon sugar
- 1 tablespoon lemon juice

Wash and chop the fresh tomatoes into quarters. Set aside.

Peel and dice the onion. Mince the garlic cloves.

In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.

Add the minced garlic to the pot and sauté for an additional 1-2 minutes, stirring frequently to prevent burning.

Add the chopped tomatoes to the pot, along with 4 cups of vegetable broth, 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 teaspoon of sugar. Stir well.

Bring the mixture to a boil, then reduce the heat to low and let it simmer for 20-25 minutes, uncovered, until the tomatoes are soft.

Remove the pot from heat and use an immersion blender to puree the soup until smooth. If you don't have an immersion blender, carefully transfer the soup in batches to a blender.

Stir in the fresh basil leaves and the lemon juice. Adjust seasoning with more salt and pepper if needed.

Serve the soup hot, garnished with a dollop of sour cream and additional fresh basil leaves if desired.
