
Poha - Flattened Rice with Peas and Spices
Light and fluffy flattened rice sautéed with peas, peanuts, and spices, garnished with fresh coriander.
Ingredients
- 2 cups flattened rice
- 1 cup peas
- 1 teaspoon mustard seeds
- 1 teaspoon turmeric powder
- 1 cup peanuts
- 1 bunch fresh coriander
- 1 whole green chili
- 1 medium onion
- 1 teaspoon salt
- 2 tablespoons oil
- 1 tablespoon lemon juice
- 8 leaves curry leaves

Rinse the flattened rice in cold water for about 1-2 minutes until it becomes soft. Drain and set aside.

In a large skillet, heat 2 tablespoons of oil over medium heat. Once hot, add 1 teaspoon of mustard seeds and let them splutter for about 30 seconds.

Add 8 curry leaves and 1 whole green chili (slit lengthwise) to the skillet. Sauté for 1 minute until fragrant.

Add 1 medium chopped onion to the skillet and cook for about 3-4 minutes until it turns translucent.

Stir in 1 cup of peas and cook for another 2-3 minutes until they are tender.

Sprinkle in 1 teaspoon of turmeric powder and 1 teaspoon of salt. Mix well.

Add the rinsed flattened rice to the skillet. Gently mix everything together to ensure the rice is coated with the spices. Cook for about 2-3 minutes, stirring occasionally.

Add 1 cup of roasted peanuts and 1 tablespoon of lemon juice. Mix well and cook for an additional 1-2 minutes.

Remove from heat and garnish with a bunch of freshly chopped coriander.
