Poached Avocado and Tomato Salad
A light salad featuring poached avocado paired with juicy tomatoes and a drizzle of cilantro dressing, perfect for a refreshing lunch.
Ingredients
- 2 whole avocado
- 2 whole tomatoes
- 1 cup cilantro
- 1 whole lime
- 1 small red onion
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 4 cups water
- 1 clove garlic

Fill a medium saucepan with 4 cups of water and bring it to a gentle simmer over medium heat.

While the water is heating, prepare the dressing. In a small bowl, combine 1 cup of chopped cilantro, the juice of 1 lime, 2 tablespoons of olive oil, 1 minced garlic clove, 1 teaspoon of salt, and 1 teaspoon of black pepper. Whisk until well combined and set aside.

Once the water is simmering, carefully cut each avocado in half, remove the pit, and scoop out the flesh. Gently place the avocado halves into the simmering water and poach for 2-3 minutes. This will warm them and slightly soften the texture.

While the avocados are poaching, chop the tomatoes and red onion into bite-sized pieces.

After 2-3 minutes, carefully remove the avocado halves from the water using a slotted spoon and drain them on a paper towel.

On a serving plate, arrange the poached avocado halves and top them with the chopped tomatoes and red onion.

Drizzle the cilantro dressing generously over the salad and garnish with additional cilantro if desired.
