
Špenátové knedlíky
Spinach dumplings served with melted butter and breadcrumbs, a unique Czech specialty.
Ingredients
- 10 oz fresh spinach
- 1 cup all-purpose flour
- 2 large eggs
- 4 tbsp unsalted butter
- 1 tsp salt
- 1 cup breadcrumbs
- 1 tsp black pepper
- 1 pinch nutmeg
- 4 cups water

Wash the fresh spinach thoroughly under cold water to remove any dirt or grit. Drain and set aside.

In a large pot, bring 4 cups of water to a boil. Add a pinch of salt.

Once boiling, add the spinach to the pot and cook for 2-3 minutes until wilted. Drain the spinach and let it cool. Once cool, chop it finely.

In a mixing bowl, combine the chopped spinach, 1 cup of flour, 2 large eggs, 1 teaspoon of salt, 1 teaspoon of black pepper, and a pinch of nutmeg. Mix until a dough forms. If the dough is too sticky, add a little more flour.

Divide the dough into 8 equal portions and shape each portion into a ball.

In the same pot, bring the salted water back to a gentle boil. Carefully drop the dumplings into the boiling water.

Cook the dumplings for 10-12 minutes. They are done when they float to the surface. Remove them with a slotted spoon and set aside.

In a skillet, melt 4 tablespoons of unsalted butter over medium heat. Add 1 cup of breadcrumbs and toast until golden brown, stirring frequently, about 5 minutes.

To serve, place the dumplings on a plate, drizzle with the melted butter and toasted breadcrumbs. Enjoy your Špenátové knedlíky!
