Pečené vepřové s cibulí
Roasted pork shoulder with caramelized onions, a classic Czech comfort dish.
Ingredients
- 3 pounds pork shoulder
- 2 large onions
- 4 cloves garlic
- 2 tablespoons fresh thyme
- 2 teaspoons salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
- 1 cup chicken broth
- 2 leaves bay leaves
- 2 medium carrots

Preheat your oven to 325°F (163°C).

Pat the pork shoulder dry with paper towels. Rub it with olive oil, salt, black pepper, and fresh thyme.

In a large oven-safe skillet or Dutch oven, heat 1 tablespoon of olive oil over medium-high heat. Once hot, sear the pork shoulder on all sides until browned, about 4-5 minutes per side.

Remove the pork shoulder from the skillet and set aside. In the same skillet, add the sliced onions and cook until they start to caramelize, about 10 minutes.

Add minced garlic to the onions and cook for an additional 2 minutes until fragrant.

Return the pork shoulder to the skillet, nestling it among the onions. Pour in the chicken broth and add the bay leaves and chopped carrots.

Cover the skillet with a lid or aluminum foil and transfer it to the preheated oven. Roast for 2.5 to 3 hours, or until the pork is tender and easily shreds with a fork.

Once done, remove the skillet from the oven. Let the pork rest for 15 minutes before slicing.

Serve the sliced pork with the caramelized onions and carrots, spooning some of the pan juices over the top.
