Oven-baked potatoes with fresh herbs, a simple yet flavorful side dish.
Ingredients
- 2 pounds potatoes
- 2 tablespoons fresh rosemary
- 2 tablespoons fresh thyme
- 4 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 4 cloves garlic cloves
- 1 whole lemon

Preheat your oven to 425°F (220°C).

Wash and scrub 2 pounds of potatoes thoroughly. Cut them into uniform wedges or cubes, about 1-2 inches in size.

In a large mixing bowl, combine the potato wedges with 4 tablespoons of olive oil, 2 tablespoons of chopped fresh rosemary, 2 tablespoons of chopped fresh thyme, 1 teaspoon of salt, and 1 teaspoon of black pepper.

Mince 4 cloves of garlic and add them to the potato mixture. Squeeze the juice of 1 whole lemon over the potatoes and toss everything together until well-coated.

Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper.

Bake in the preheated oven for 30-35 minutes, turning the potatoes halfway through, until they are golden brown and crispy on the outside.

Once baked, remove from the oven and let them cool for a few minutes. Optionally, garnish with additional fresh herbs before serving.
