Pav Bhaji - Spicy Vegetable Mash with Bread

A spicy mix of mashed vegetables served with buttered bread rolls, a popular street food from Mumbai.

Ingredients

  • 2 medium potato
  • 1 cup peas
  • 2 medium tomato
  • 1 large onion
  • 1 medium bell pepper
  • 4 tablespoons butter
  • 2 tablespoons pav bhaji masala
  • 1 medium green chili
  • 1 inch piece ginger
  • 2 tablespoons, chopped cilantro
  • 1 medium lemon
  • 8 pieces pav (bread rolls)
  • salt

    Peel and chop the potatoes into quarters. Boil them in a pot of salted water for about 15-20 minutes or until tender. Drain and set aside.

    In the same pot, add the peas and cook for an additional 5 minutes until softened. Drain and set aside with the potatoes.

    Finely chop the onion, bell pepper, green chili, and ginger.

    In a large skillet, melt 2 tablespoons of butter over medium heat. Add the chopped onions and sauté for about 5 minutes or until they are translucent.

    Add the bell pepper, green chili, and ginger to the skillet. Cook for another 3-4 minutes until the bell pepper is soft.

    Chop the tomatoes and add them to the skillet. Cook for about 5-7 minutes until the tomatoes break down and the mixture becomes saucy.

    Add the boiled potatoes and peas to the skillet. Mash everything together using a potato masher until you achieve a chunky consistency.

    Stir in the pav bhaji masala and salt to taste. Cook the mixture for an additional 5 minutes on low heat, stirring occasionally.

    Chop the cilantro and stir it into the bhaji. Squeeze in the juice of half a lemon and mix well.

    In a separate pan, melt the remaining 2 tablespoons of butter. Slice the pav rolls in half and toast them in the butter until golden brown on both sides.

    Serve the hot bhaji in a bowl, garnished with chopped cilantro and lemon wedges, alongside the buttered pav rolls.
