
Paukščių Sriuba - Poultry Soup
A flavorful soup made with chicken, vegetables, and herbs, perfect for cold winter days.
Ingredients
- 2 lbs chicken
- 3 medium carrots
- 2 stalks celery
- 1 large onions
- 1 teaspoon thyme
- 1 teaspoon black pepper
- 2 pieces bay leaves
- 3 cloves garlic
- 8 cups chicken broth
- 1 teaspoon salt
- 1 tablespoon parsley
- 2 tablespoons olive oil

Instructions

In a large pot, heat 2 tablespoons of olive oil over medium heat.

Add 1 large chopped onion and sauté for about 5 minutes until translucent.

Add 3 minced garlic cloves, 3 medium chopped carrots, and 2 stalks of chopped celery to the pot. Cook for another 5 minutes, stirring occasionally.

Add 2 lbs of whole chicken to the pot along with 8 cups of chicken broth, 1 teaspoon of salt, 1 teaspoon of black pepper, 1 teaspoon of thyme, and 2 bay leaves.

Bring the mixture to a boil, then reduce to a simmer. Cover and cook for 30-40 minutes, or until the chicken is cooked through and tender.

Remove the chicken from the pot and let it cool slightly. Once cool, shred the meat off the bones and return the shredded chicken to the pot.

Taste the soup and adjust seasoning if needed. Remove bay leaves before serving.

Serve hot, garnished with 1 tablespoon of chopped fresh parsley.
