Instructions
- 1
Soak the cashews in warm water for 15 minutes to soften them.
- 2
In a blender, combine the soaked cashews and 1/2 cup of water. Blend until smooth and creamy. Set aside.
- 3
In a large skillet, melt 2 tablespoons of butter over medium heat. Add finely chopped onion and sauté for 5-7 minutes until golden brown.
- 4
Add minced ginger and chopped green chili to the skillet. Sauté for another 2 minutes until fragrant.
- 5
Chop the tomatoes and add them to the skillet. Cook for 10-12 minutes until the tomatoes break down and become saucy.
- 6
Stir in the garam masala, coriander powder, cumin powder, and salt. Cook for an additional 2 minutes.
- 7
Add the cashew cream mixture and 1 cup of water to the skillet. Stir well and bring to a simmer.
- 8
Reduce the heat to low and add the cubed paneer. Simmer for 5-7 minutes, allowing the paneer to absorb the flavors.
- 9
Stir in the remaining 2 tablespoons of butter and the heavy cream. Mix well and simmer for another 2-3 minutes.
- 10
Garnish with chopped fresh cilantro before serving.
- 11
Serve hot with naan or rice.
