Savory pancakes filled with spiced meat, rolled up, and baked with a creamy sauce, perfect for lunch.
Ingredients
- 1 cup all-purpose flour
- 2 large eggs
- 1.5 cups milk
- 1 pound ground meat (beef or pork)
- 1 medium onion
- 1 cup heavy cream
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 1 teaspoon paprika
- 0.5 teaspoon garlic powder
- 2 tablespoons olive oil
- 2 tablespoons parsley (fresh, chopped)

In a large mixing bowl, whisk together 1 cup of flour, 2 large eggs, and 1.5 cups of milk until smooth. Add 1 teaspoon of salt and mix well. Let the batter rest for 30 minutes.

While the batter is resting, finely chop 1 medium onion. Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.

Add 1 pound of ground meat to the skillet with the onions. Cook for 7-10 minutes, breaking the meat apart with a spatula, until it is browned and fully cooked.

Season the meat mixture with 1 teaspoon of paprika, 0.5 teaspoon of black pepper, and 0.5 teaspoon of garlic powder. Stir in 2 tablespoons of chopped fresh parsley. Remove from heat and let it cool slightly.

In a non-stick skillet, heat a small amount of oil over medium heat. Pour a ladle of pancake batter into the skillet, swirling to cover the bottom evenly. Cook for about 2-3 minutes until the edges start to lift, then flip and cook for another 1-2 minutes. Repeat with the remaining batter to make about 6 pancakes.

Preheat your oven to 350°F (175°C). Spread a thin layer of heavy cream (about 1/4 cup) on the bottom of a baking dish.

To assemble, place a pancake on a plate, add a generous spoonful of the meat mixture in the center, then roll it up tightly. Place the rolled pancake seam-side down in the baking dish. Repeat with the remaining pancakes.

Once all pancakes are in the baking dish, pour the remaining heavy cream over the top, ensuring each pancake is covered. Bake in the preheated oven for 20-25 minutes until heated through and slightly golden.

Remove from the oven and let cool for 5 minutes before serving. Garnish with additional chopped parsley if desired.
