
Oden (おでん)
A comforting winter stew featuring various ingredients like daikon, fish cakes, and tofu simmered in dashi, perfect for a cozy dinner.
Ingredients
- 1 medium daikon
- 1 block konnyaku
- 8 pieces fish cakes
- 1 block tofu
- 4 cups dashi
- 1 cup soy sauce
- 1 cup mirin
- 2 stalks green onions
- 4 pieces boiled eggs
- 2 tablespoons miso paste

Prepare the dashi broth by combining 4 cups of water with dashi powder in a pot. Bring to a gentle simmer over medium heat.

While the dashi is heating, peel and slice the daikon into 1-inch thick rounds. Cut the konnyaku into bite-sized triangles.

Once the dashi reaches a simmer, add the sliced daikon and konnyaku to the pot. Cook for about 15 minutes until the daikon is tender.

Add the fish cakes, tofu (cut into cubes), and boiled eggs to the pot. Stir gently to combine.

In a small bowl, mix together the soy sauce, mirin, and miso paste until well combined. Pour this mixture into the pot.

Reduce the heat to low and let the oden simmer for an additional 20-30 minutes, stirring occasionally to ensure even cooking.

While the oden simmers, slice the green onions into thin rings for garnish.
