
Niku Udon (肉うどん)
Hearty udon noodles served in a flavorful broth with tender slices of beef and vegetables.
Ingredients
- 12 oz udon noodles
- 8 oz beef sirloin
- 4 cups dashi broth
- 3 tablespoons soy sauce
- 2 tablespoons mirin
- 4 stalks green onions
- 2 cups spinach
- 1 cup shiitake mushrooms
- 1 inch piece ginger
- 2 cloves garlic

Bring a large pot of water to a boil. Add the udon noodles and cook according to package instructions, usually about 8-10 minutes. Once cooked, drain and set aside.

While the noodles are cooking, prepare the broth. In a separate pot, combine the dashi broth, soy sauce, and mirin. Bring to a gentle simmer over medium heat.

Thinly slice the beef sirloin against the grain into bite-sized pieces.

Add the sliced beef to the simmering broth. Cook for about 3-4 minutes until the beef is just cooked through.

While the beef is cooking, slice the shiitake mushrooms and chop the green onions. Mince the garlic and ginger.

Add the shiitake mushrooms, minced garlic, and ginger to the broth. Stir and let simmer for another 2-3 minutes.

Add the spinach and chopped green onions to the broth. Cook for an additional 1-2 minutes until the spinach is wilted.

To serve, divide the cooked udon noodles into bowls and ladle the hot broth with beef and vegetables over the noodles.
