
Mushroom and Kale Hash with Sweet Potatoes
A hearty hash featuring sautéed mushrooms, kale, and sweet potatoes, perfect for a filling breakfast.
Ingredients
- 8 oz mushrooms
- 4 cups kale
- 2 medium sweet potatoes
- 1 medium onion
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 3 cloves garlic
- 1 medium red bell pepper
- 1 tsp smoked paprika

Peel and dice the sweet potatoes into 1/2 inch cubes. Place them in a pot and cover with water. Bring to a boil over medium-high heat and cook for about 10 minutes, or until tender. Drain and set aside.

While the sweet potatoes are cooking, finely chop the onion, garlic, and red bell pepper. Slice the mushrooms.

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until it becomes translucent.

Add the minced garlic and sliced mushrooms to the skillet. Cook for an additional 5-7 minutes, stirring occasionally, until the mushrooms are browned and have released their moisture.

Add the diced red bell pepper, cooked sweet potatoes, and kale to the skillet. Season with salt, black pepper, and smoked paprika. Stir well to combine.

Cover the skillet and cook for 5-7 minutes, stirring occasionally, until the kale is wilted and tender.
