
Memphis-Style Pulled Pork
Savory pulled pork shoulder, slow-smoked and served with a tangy vinegar-based sauce, embodying Memphis flavor.
Ingredients
- 4 lbs pork shoulder
- 1 cup apple cider vinegar
- 1 cup brown sugar
- 1 cup yellow mustard
- 1 tbsp cayenne pepper
- 1 tbsp salt
- 1 tbsp black pepper
- 2 tbsp paprika
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 8 pieces buns
- 1 cup pickles
- 2 cups coleslaw

Prepare the pork shoulder. Trim excess fat from the pork shoulder and cut it into large chunks if necessary.

In a bowl, mix together the brown sugar, cayenne pepper, salt, black pepper, paprika, garlic powder, and onion powder to create a dry rub.

Rub the dry mixture all over the pork shoulder, ensuring it is evenly coated. Let it marinate in the refrigerator for at least 2 hours, preferably overnight.

Preheat your smoker to 225°F (107°C). Use hickory or applewood chips for a classic Memphis flavor.

Once the smoker is ready, place the pork shoulder on the grill grates. Smoke the pork for approximately 8-10 hours, or until it reaches an internal temperature of 195°F (90°C) and is tender enough to pull apart easily.

While the pork is smoking, prepare the vinegar-based sauce by combining the apple cider vinegar and mustard in a bowl. Adjust the seasoning with salt and pepper to taste.

After the pork has finished smoking, remove it from the smoker and let it rest for about 30 minutes before shredding.

Using two forks, shred the pork into bite-sized pieces. Mix the shredded pork with the vinegar-based sauce.
