
Marinated Grilled Veggie Skewers with Balsamic Glaze

Ingredients
- 2 medium bell peppers
- 2 medium zucchini
- 1 pint cherry tomatoes
- 1 medium red onion
- 1 cup balsamic vinegar
- 3 tablespoons olive oil
- 1 teaspoon sea salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 8 pieces skewers

Prepare the skewers by soaking wooden skewers in water for at least 30 minutes to prevent burning on the grill.

Chop the bell peppers into 1-inch pieces, slice the zucchini into rounds, and cut the red onion into wedges.

In a large bowl, combine the balsamic vinegar, olive oil, sea salt, black pepper, garlic powder, and dried oregano. Whisk until well mixed.

Add the chopped vegetables (bell peppers, zucchini, cherry tomatoes, and red onion) to the marinade. Toss well to ensure all vegetables are coated. Cover and let marinate in the refrigerator for at least 30 minutes.

Preheat your grill to medium-high heat (about 400°F).

Thread the marinated vegetables onto the soaked skewers, alternating between different types for a colorful presentation.
