Lentil and Vegetable Stuffed Cabbage Rolls

Tender cabbage leaves filled with a hearty lentil and vegetable mixture, baked in a rich tomato sauce.

Ingredients

  • 1 head cabbage
  • 1 cup green lentils
  • 1 cup rice
  • 1 medium onion
  • 2 medium carrots
  • 2 cups tomato sauce
  • 3 cloves garlic
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1 tablespoon fresh parsley

    Preheat your oven to 375°F (190°C).

    Bring a large pot of salted water to a boil. Carefully remove the core from the cabbage head and place it in the boiling water. Blanch the cabbage for about 5 minutes, or until the leaves are tender and pliable. Remove and set aside to cool.

    In a medium saucepan, combine the green lentils and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 20-25 minutes, or until the lentils are tender. Drain any excess liquid.

    In another medium saucepan, cook the rice according to package instructions. Set aside.

    While the lentils and rice are cooking, heat the olive oil in a skillet over medium heat. Add the chopped onion and carrots, and sauté for about 5-7 minutes, until the onion is translucent and the carrots are tender.

    Add minced garlic, dried oregano, salt, and black pepper to the skillet. Cook for an additional 2 minutes until fragrant.

    In a large mixing bowl, combine the cooked lentils, rice, and sautéed vegetables. Stir in 1 cup of tomato sauce and fresh parsley. Mix well to combine.

    Take a cabbage leaf and place a generous amount of the lentil mixture at the base of the leaf. Fold in the sides and roll up tightly. Repeat until all the mixture is used.

    Spread a thin layer of the remaining tomato sauce on the bottom of a baking dish. Place the stuffed cabbage rolls seam-side down in the dish. Pour the remaining tomato sauce over the top.

    Cover the baking dish with foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 15 minutes, until the sauce is bubbling.
