Gather all ingredients: smoked salmon, eggs, heavy cream, chives, butter, salt, black pepper, and toasted bread.

In a bowl, crack the 4 large eggs, add 2 tablespoons of heavy cream, a pinch of salt, and a pinch of black pepper. Whisk together until fully combined.

Chop 2 tablespoons of fresh chives and set aside.

In a non-stick skillet, melt 2 tablespoons of butter over low heat until it is fully melted and bubbling slightly.

Pour the egg mixture into the skillet and let it sit for about 30 seconds without stirring.

Gently stir the eggs with a spatula, pushing them from the edges towards the center. Continue to cook for 3-5 minutes, stirring occasionally, until the eggs are softly set and creamy.
