
Kyselice - Czech Sour Soup
A traditional Czech sour soup made with fermented rye bread and potatoes, showcasing rustic flavors and a touch of dill.
Ingredients
- 4 slices rye bread
- 2 medium potatoes
- 1 cup sour cream
- 6 cups vegetable broth
- 2 tablespoons dill
- 1 medium onion
- 2 cloves garlic
- 1 medium carrot
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil

Prepare the ingredients: Dice the potatoes, onion, and carrot. Mince the garlic.

In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.

Add the minced garlic and diced carrot to the pot. Sauté for an additional 2 minutes until fragrant.

Add the diced potatoes and stir for 2 minutes. Then pour in the 6 cups of vegetable broth.

Bring the mixture to a boil, then reduce the heat to low and let it simmer for 15-20 minutes, or until the potatoes are tender.

While the potatoes are cooking, tear the rye bread into small pieces and set aside.

Once the potatoes are tender, add the torn rye bread to the pot and stir well. Let it simmer for another 5 minutes to allow the bread to soften and infuse the soup with flavor.

Stir in 1 cup of sour cream, 2 tablespoons of chopped dill, 1 teaspoon of salt, and 1 teaspoon of black pepper. Mix until well combined.

Remove the pot from heat and let it sit for 5 minutes to thicken slightly.
