
Kumpio Sriuba - Ham Soup
A hearty Lithuanian soup made with smoked ham, potatoes, and carrots, rich in flavor and tradition. Perfect for warming up on a cold day.
Ingredients
- 1 lb smoked ham
- 4 medium potatoes
- 3 medium carrots
- 1 large onions
- 2 bay leaves
- 1 teaspoon black pepper
- 2 cloves garlic
- 2 stalks celery
- 6 cups vegetable broth
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 tablespoon fresh parsley

Instructions

Dice the smoked ham into bite-sized pieces.

Peel and chop the potatoes into cubes.

Peel and slice the carrots into rounds.

Chop the onion and celery stalks.

Mince the garlic cloves.

In a large pot, heat the olive oil over medium heat. Add the chopped onions and celery, and sauté for 5 minutes until softened.

Add the minced garlic and diced smoked ham to the pot, cooking for an additional 3 minutes until the ham is slightly browned.

Stir in the chopped potatoes, sliced carrots, bay leaves, black pepper, and salt.

Pour in the vegetable broth and bring the mixture to a boil.

Once boiling, reduce the heat to low and cover the pot. Simmer for 30-35 minutes, or until the vegetables are tender.

Remove the bay leaves and adjust seasoning if necessary.
