
Käse-Sahne-Torte - Cheese Cream Cake
A delightful cake made with layers of cream cheese and a buttery crust, perfect with coffee.
Ingredients
- 16 oz cream cheese
- 3 cups granulated sugar
- 2 tablespoons gelatin powder
- 2 teaspoons vanilla extract
- 1 cup unsalted butter
- 1 9-inch round cake base (sponge cake)
- 1 cup heavy whipping cream
- 2 tablespoons lemon juice
- 1 cup powdered sugar
- 1 cup fresh berries (optional for garnish)

Preheat your oven to 350°F (175°C). Prepare a 9-inch round cake pan by greasing it with butter and lining the bottom with parchment paper.

In a medium bowl, melt 1 cup of unsalted butter. Once melted, add the sponge cake base and mix until fully combined. Press the mixture evenly into the bottom of the prepared cake pan.

Bake the cake base in the preheated oven for 10-12 minutes, or until lightly golden. Remove from the oven and allow it to cool completely.

In a small bowl, sprinkle 2 tablespoons of gelatin powder over 1/4 cup of cold water. Let it sit for 5 minutes to bloom.

In a large mixing bowl, beat 16 oz of cream cheese and 3 cups of granulated sugar together until smooth and creamy. Add 2 teaspoons of vanilla extract and 2 tablespoons of lemon juice, mixing until well combined.

In a small saucepan, gently heat the bloomed gelatin mixture over low heat until it dissolves completely. Do not let it boil.

Slowly pour the dissolved gelatin into the cream cheese mixture while continuously mixing to ensure even distribution.

In a separate bowl, whip 1 cup of heavy whipping cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.

Pour the cream cheese mixture over the cooled cake base in the pan. Smooth the top with a spatula.

Cover the cake with plastic wrap and refrigerate for at least 4 hours, or until set.

Once set, remove the cake from the refrigerator. Carefully release it from the pan and peel off the parchment paper.
