
Kopūstų Sriuba - Cabbage Soup
A robust soup made with fermented cabbage, potatoes, and smoked meats, embodying traditional Lithuanian flavors.
Ingredients
- 4 cups fermented cabbage
- 3 medium potatoes
- 6 oz smoked bacon
- 2 medium carrots
- 1 large onions
- 1 teaspoon black pepper
- 3 cloves garlic
- 6 cups vegetable broth
- 2 leaves bay leaves
- 2 tablespoons fresh dill

In a large pot, cook the smoked bacon over medium heat for about 5-7 minutes until it is crispy. Remove the bacon and set aside, leaving the drippings in the pot.

Add the chopped onions and minced garlic to the pot with the bacon drippings. Sauté for 3-4 minutes until the onions are translucent.

Add the diced carrots and cook for an additional 3 minutes, stirring occasionally.

Peel and dice the potatoes into small cubes. Add them to the pot along with the fermented cabbage, vegetable broth, black pepper, and bay leaves.

Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 30 minutes or until the potatoes are tender.

Once the potatoes are cooked, return the crispy bacon to the pot and stir in the fresh dill. Taste and adjust seasoning if necessary.

Remove the bay leaves before serving. Ladle the soup into bowls and enjoy hot.
