
Koprová omáčka s hovězím masem
A traditional Czech dish featuring tender beef served with a creamy dill sauce, typically accompanied by boiled potatoes.
Ingredients
- 1.5 pounds beef
- 1 cup fresh dill
- 1 cup heavy cream
- 2 tablespoons all-purpose flour
- 4 tablespoons butter
- 2 pounds potatoes
- 2 tablespoons white vinegar
- 1 teaspoon salt
- 1 teaspoon black pepper
- 4 cups water

In a large pot, bring 4 cups of water to a boil. Add 1 teaspoon of salt and the beef. Reduce heat to a simmer and cook for 1.5 to 2 hours until the beef is tender.

While the beef is cooking, peel and cut the potatoes into quarters. In a separate pot, bring salted water to a boil. Add the potatoes and cook for 15-20 minutes until tender. Drain and set aside.

In a saucepan, melt 4 tablespoons of butter over medium heat. Add 2 tablespoons of all-purpose flour and whisk continuously for about 2 minutes to create a roux.

Gradually add 1 cup of the beef broth (from the pot with the beef) to the roux, whisking constantly to avoid lumps. Cook for another 5 minutes until the sauce thickens.

Stir in 1 cup of heavy cream, 1 cup of chopped fresh dill, and 2 tablespoons of white vinegar. Season with 1 teaspoon of black pepper and adjust salt to taste. Simmer for an additional 5 minutes.

Once the beef is tender, remove it from the pot and slice it into serving pieces. Serve the beef topped with the creamy dill sauce alongside the boiled potatoes.
