
Kiaulienos Sriuba - Pork Soup
A rich pork soup cooked with root vegetables and herbs, offering a taste of rural Lithuania.
Ingredients
- 2 pounds pork shoulder
- 4 medium potatoes
- 3 medium carrots
- 2 medium onions
- 1 bunch fresh parsley
- 1 teaspoon black pepper
- 1 teaspoon salt
- 3 cloves garlic
- 2 leaves bay leaves
- 8 cups water
- 2 tablespoons olive oil

Begin by cutting the pork shoulder into 1-inch cubes. Season with salt and black pepper.

In a large pot, heat the olive oil over medium heat. Add the pork cubes and brown them on all sides for about 5-7 minutes.

While the pork is browning, chop the onions and garlic. Once the pork is browned, add the chopped onions and minced garlic to the pot. Sauté for an additional 3-4 minutes until the onions become translucent.

Peel and dice the potatoes and carrots into bite-sized pieces. Add them to the pot along with the bay leaves and 8 cups of water.

Bring the mixture to a boil. Once boiling, reduce the heat to low and cover the pot. Let it simmer for about 1 hour, stirring occasionally.

After 1 hour, check the tenderness of the pork and vegetables. If they are tender, remove the bay leaves and stir in the chopped parsley.

Taste the soup and adjust seasoning with more salt and black pepper if needed. Simmer for an additional 10 minutes.

Serve the Kiaulienos Sriuba hot in bowls, garnished with additional fresh parsley if desired.
