A smoky and flavorful soup made with roasted fish, potatoes, and fresh herbs, perfect for a comforting meal.
Ingredients
- 2 cups roasted fish
- 2 medium potatoes
- 2 medium carrots
- 1 large onions
- 1 tablespoon dill
- 4 cups vegetable broth
- 2 tablespoons olive oil
- 3 cloves garlic
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1 tablespoon lemon juice

Preheat your oven to 400°F (200°C).

Prepare the roasted fish by placing it on a baking sheet. Drizzle with 1 tablespoon of olive oil and season with salt and black pepper. Roast in the preheated oven for 20-25 minutes or until fully cooked and flaky.

While the fish is roasting, peel and dice the potatoes and carrots into small cubes. Chop the onion and mince the garlic.

In a large pot, heat the remaining 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing for about 5 minutes until the onion is translucent.

Add the diced potatoes and carrots to the pot, stirring well. Cook for an additional 5 minutes.

Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for 15-20 minutes, or until the potatoes and carrots are tender.

Once the fish is roasted, remove it from the oven and let it cool slightly. Flake the fish into bite-sized pieces, discarding any bones.

Add the flaked fish to the soup along with the chopped dill and lemon juice. Stir gently to combine and let it simmer for another 5 minutes.

Taste the soup and adjust seasoning with additional salt and pepper if needed. Serve hot, garnished with extra dill if desired.
