
Kelininkų Sriuba - Wedding Soup
A festive Lithuanian soup featuring savory meatballs, fresh vegetables, and aromatic herbs, traditionally served at weddings.
Ingredients
- 1 pound ground beef
- 1 cup white rice
- 2 medium carrots
- 1 large onion
- 1 bunch fresh dill
- 8 cups broth (beef or vegetable)
- 1 large egg
- 2 cloves garlic
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon olive oil
- 1 leaf bay leaf

In a medium bowl, combine 1 pound of ground beef, 1 cup of cooked white rice, 1 large egg, 2 minced garlic cloves, 1 teaspoon of salt, and 1 teaspoon of black pepper. Mix well until combined.

Shape the meat mixture into small meatballs, about 1 inch in diameter. You should have approximately 24 meatballs.

In a large pot, heat 1 tablespoon of olive oil over medium heat. Add 1 large chopped onion and 2 medium diced carrots. Sauté for about 5-7 minutes until the vegetables are softened.

Pour in 8 cups of broth (beef or vegetable) and add 1 bay leaf. Bring to a boil over high heat.

Once boiling, gently add the meatballs to the pot. Reduce the heat to medium-low and simmer for 20 minutes, or until the meatballs are cooked through.

Remove the bay leaf and stir in the chopped fresh dill (about 1 bunch). Adjust seasoning with additional salt and pepper if needed.
