Kartoffelpuffer mit Apfelmus

Ingredients
- 4 large potatoes
- 1 medium onion
- 1 cup all-purpose flour
- 1 egg
- 1 cup apple sauce
- 1 cup vegetable oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 cup sour cream
- 2 tablespoons fresh parsley

Peel the potatoes and onion. Grate them using a box grater or food processor until finely shredded.

Place the grated potatoes and onion in a clean kitchen towel and squeeze out excess moisture.

In a large mixing bowl, combine the grated potatoes, onion, flour, egg, salt, and black pepper. Mix until well combined.

Heat 1/4 cup of vegetable oil in a large skillet over medium-high heat until shimmering.

Using a 1/4 cup measuring cup, scoop the potato mixture and form it into a patty. Carefully place it into the hot oil.

Cook each pancake for about 4-5 minutes on one side until golden brown, then flip and cook for an additional 4-5 minutes on the other side.

Transfer the cooked pancakes to a paper towel-lined plate to drain excess oil. Repeat with the remaining mixture, adding more oil as needed.
