
Kanda Poha - Onion Flattened Rice
A Maharashtrian breakfast made from flattened rice, sautéed with onions, mustard seeds, and turmeric, garnished with fresh coriander and lemon.
Ingredients
- 2 cups flattened rice
- 1 medium onions
- 1 teaspoon mustard seeds
- 1 teaspoon turmeric
- 2 whole green chilies
- 1 cup peanuts
- 2 tablespoons oil
- 1 teaspoon salt
- 2 tablespoons coriander leaves
- 1 whole lemon

Instructions

Rinse 2 cups of flattened rice under cold water in a fine mesh strainer. Let it drain for about 10 minutes until softened.

Peel and finely chop 1 medium onion.

In a large pan, heat 2 tablespoons of oil over medium heat.

Add 1 teaspoon of mustard seeds to the oil. Allow them to splutter for about 30 seconds.

Add the chopped onions and 2 whole green chilies (slit lengthwise) to the pan. Sauté for 5-6 minutes until the onions become translucent.

Stir in 1 teaspoon of turmeric and 1 teaspoon of salt, mixing well for another minute.

Add the drained flattened rice to the pan and gently mix everything together, ensuring the rice is evenly coated with the spices. Cook for about 2-3 minutes.

Add 1 cup of peanuts to the mixture and stir well. Cook for an additional 2 minutes.

Remove from heat and garnish with 2 tablespoons of chopped coriander leaves.

Serve hot with a wedge of lemon on the side for squeezing over the poha.
