
Kadai Chicken - Spicy Chicken Stir-Fry
A flavorful North Indian dish featuring tender chicken stir-fried with bell peppers, onions, and a blend of aromatic spices.
Ingredients
- 1 pound boneless chicken thighs
- 2 medium bell peppers
- 1 large onion
- 2 medium tomato
- 1 tablespoon ginger
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- 2 whole green chili
- 4 cloves garlic
- 2 tablespoons oil
- 1 teaspoon salt
- 1 tablespoon fresh coriander leaves
- 1 cup water
- 1 teaspoon garam masala

Prepare the ingredients: Dice the chicken thighs into bite-sized pieces, chop the bell peppers and onion into strips, and finely chop the tomatoes, ginger, garlic, and green chilies.

Heat 2 tablespoons of oil in a wok or large skillet over medium-high heat. Once hot, add the ginger and garlic, sautéing for about 30 seconds until fragrant.

Add the diced chicken to the wok, stirring frequently. Cook for about 5-7 minutes until the chicken is browned and cooked through.

Stir in the chopped onion and cook for another 3-4 minutes until the onion is translucent.

Add the diced tomatoes, coriander powder, cumin powder, and salt. Cook for about 5 minutes until the tomatoes break down and form a sauce.

Add the bell peppers and green chilies to the wok. Stir well and cook for an additional 5 minutes until the peppers are tender but still crisp.

Pour in 1 cup of water and bring the mixture to a simmer. Cook for another 3-4 minutes to allow the flavors to meld.

Sprinkle garam masala over the dish and mix well. Cook for an additional minute.
