Játrové knedlíky (Liver Dumplings)
A traditional Czech dish featuring liver dumplings, often served with a rich sauce, showcasing authentic flavors.

- 1 pound chicken liver
- 1 cup all-purpose flour
- 1 medium onion
- 2 large eggs
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons fresh parsley
- 2 tablespoons butter
- 4 cups chicken broth

Clean the chicken liver by removing any connective tissue and rinsing under cold water. Pat dry with paper towels.

In a skillet, melt 2 tablespoons of butter over medium heat. Add the chopped medium onion and sauté until translucent, about 5-7 minutes.

Add the cleaned chicken liver to the skillet with the onions. Cook for about 5-7 minutes until the liver is browned but still slightly pink in the center. Remove from heat and let cool.

In a food processor, combine the sautéed liver and onions, 2 large eggs, 1 teaspoon of salt, 1 teaspoon of black pepper, and 2 tablespoons of chopped fresh parsley. Blend until smooth.

Transfer the liver mixture to a mixing bowl and gradually stir in 1 cup of all-purpose flour until well combined. The mixture should be thick but still pliable.

Bring 4 cups of chicken broth to a gentle simmer in a large pot over medium heat.

Using a spoon, scoop out portions of the dumpling mixture (about 1 tablespoon each) and carefully drop them into the simmering broth. Repeat until all the mixture is used.

Cover the pot and let the dumplings cook for about 15-20 minutes. They will float to the surface when done.

Using a slotted spoon, remove the dumplings from the broth and place them on a plate.

Serve the játrové knedlíky warm, drizzled with some of the broth or with a rich sauce of your choice.
