
Irish Egg and Bacon Pie
A savory pie filled with eggs, bacon, and herbs, baked until golden brown, perfect for a filling lunch.

- 1 9-inch pie crust
- 8 slices bacon
- 4 large eggs
- 1 cup heavy cream
- 4 stalks spring onions
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1 cup cheddar cheese
- 2 tablespoons fresh parsley

Preheat your oven to 400°F (200°C).

In a skillet over medium heat, cook the bacon slices until crispy, about 5-7 minutes. Remove from skillet and drain on paper towels. Once cooled, chop into small pieces.

In a large mixing bowl, whisk together the eggs, heavy cream, salt, and black pepper until well combined.

Chop the spring onions and add them to the egg mixture along with the chopped bacon and parsley. Stir to combine.

Place the pie crust in a 9-inch pie dish and pour the egg and bacon mixture into the crust, spreading it evenly.

Sprinkle the cheddar cheese over the top of the mixture.

Bake in the preheated oven for 30-35 minutes, or until the filling is set and the top is golden brown.
