
Irish Bacon and Cabbage
A classic dish featuring boiled bacon served with buttery cabbage and potatoes, showcasing simple flavors.
Ingredients
- 1 pound back bacon
- 1 head green cabbage
- 4 medium potatoes
- 4 tablespoons butter
- 1 medium onion
- 1 teaspoon black pepper
- 1 teaspoon salt
- 8 cups water

In a large pot, add 8 cups of water and bring it to a boil over high heat.

Once the water is boiling, carefully add the 1 pound of back bacon. Reduce the heat to medium and let it simmer for 30 minutes.

While the bacon is cooking, peel and quarter the 4 medium potatoes. Set aside.

After 30 minutes, add the quartered potatoes to the pot with the bacon. Continue to simmer for an additional 20 minutes.

While the potatoes are cooking, slice the 1 medium onion and chop the 1 head of green cabbage.

After the potatoes have cooked for 20 minutes, add the chopped cabbage and sliced onion to the pot. Season with 1 teaspoon of salt and 1 teaspoon of black pepper.

Cover the pot and let everything simmer together for another 15 minutes, or until the cabbage is tender.

Once cooked, carefully remove the bacon, potatoes, cabbage, and onion from the pot. Place them on a serving platter.

Melt 4 tablespoons of butter and drizzle it over the cabbage and potatoes before serving.
