Hovězí guláš
A hearty beef stew slow-cooked with onions and spices, perfect for a filling lunch.
Ingredients
- 2 pounds beef chuck
- 2 medium onions
- 4 cloves garlic
- 2 tablespoons paprika
- 1 teaspoon caraway seeds
- 2 leaves bay leaves
- 4 cups water
- 2 tablespoons vegetable oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 medium carrots
- 2 medium potatoes
- 2 tablespoons fresh parsley

Cut the beef chuck into 1-inch cubes and season with salt and black pepper.

Peel and finely chop the onions and garlic.

In a large pot, heat the vegetable oil over medium-high heat.

Add the beef cubes to the pot and brown on all sides, about 5-7 minutes.

Once browned, remove the beef from the pot and set aside.

In the same pot, add the chopped onions and garlic, and sauté until the onions are translucent, about 5 minutes.

Stir in the paprika and caraway seeds, cooking for an additional minute to release their flavors.

Return the browned beef to the pot and add the bay leaves and water.

Bring the mixture to a boil, then reduce the heat to low, cover, and let simmer for 1.5 to 2 hours, stirring occasionally.

While the stew is simmering, peel and chop the carrots and potatoes into bite-sized pieces.

After 1.5 to 2 hours, add the chopped carrots and potatoes to the pot.

Continue to simmer for another 30-40 minutes, or until the vegetables are tender.

Taste and adjust seasoning with more salt and pepper if necessary.

Remove bay leaves before serving.

Garnish with fresh parsley and serve hot with crusty bread.
