
Houbová omáčka
A rich mushroom sauce made with wild mushrooms, served over dumplings or pasta.
Ingredients
- 1 pound wild mushrooms
- 1 cup heavy cream
- 1 medium onions
- 4 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 tablespoon fresh parsley
- 2 cloves garlic
- 1 cup vegetable broth
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 pinch nutmeg

Clean and chop the wild mushrooms into small pieces.

Finely chop the onion and garlic.

In a large skillet, melt 4 tablespoons of butter over medium heat.

Add the chopped onion and garlic to the skillet. Sauté for about 5 minutes until the onion is translucent.

Add the chopped wild mushrooms to the skillet. Cook for 10-15 minutes, stirring occasionally, until the mushrooms are tender and have released their moisture.

Sprinkle 2 tablespoons of flour over the mushrooms and stir well to combine. Cook for an additional 2 minutes to eliminate the raw flour taste.

Gradually pour in 1 cup of vegetable broth while stirring continuously to avoid lumps. Bring the mixture to a simmer.

Once the sauce begins to thicken, reduce the heat to low and stir in 1 cup of heavy cream. Allow it to simmer for 5 minutes.

Season the sauce with 1 teaspoon of salt, 1 teaspoon of black pepper, and a pinch of nutmeg. Stir well.

Chop 1 tablespoon of fresh parsley and stir it into the sauce just before serving.
