Herbed Tomato and Basil Couscous
A light and refreshing couscous dish with juicy tomatoes and fragrant basil, perfect for a quick breakfast side.
Ingredients
- 1 cup couscous
- 1 cup water
- 1 cup cherry tomatoes
- 1 cup fresh basil
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 clove garlic
- 1 small red onion
- 1 ounce feta cheese

In a small saucepan, bring 1 cup of water to a boil over medium heat.

Once boiling, add 1 cup of couscous and 1 teaspoon of salt. Stir well, cover, and remove from heat.

Let the couscous sit covered for about 5 minutes to absorb the water.

While the couscous is resting, wash and halve 1 cup of cherry tomatoes.

Finely chop 1 cup of fresh basil leaves, 1 small red onion, and mince 1 clove of garlic.

In a large mixing bowl, combine the halved cherry tomatoes, chopped basil, red onion, and minced garlic.

Fluff the couscous with a fork and add it to the mixing bowl with the tomato and basil mixture.

Drizzle 2 tablespoons of olive oil and 1 tablespoon of lemon juice over the mixture.

Season with 1 teaspoon of black pepper, and toss everything together until well combined.

If desired, crumble 1 ounce of feta cheese over the top before serving.

Serve immediately as a light breakfast side or refrigerate for up to 2 days.
