
Grilled Vegetable Skewers with Smoky Marinade
Assorted seasonal vegetables grilled on skewers with a smoky marinade, ideal for a light lunch.
Ingredients
- 2 medium bell peppers
- 2 medium zucchini
- 1 large red onion
- 4 tablespoons olive oil
- 2 teaspoons smoked paprika
- 3 cloves garlic
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 cup cherry tomatoes
- 2 tablespoons fresh parsley

Preheat your grill to medium-high heat (about 400°F).

While the grill is heating, prepare the marinade. In a small bowl, combine 4 tablespoons of olive oil, 2 teaspoons of smoked paprika, minced garlic (3 cloves), 1 teaspoon of salt, and 1 teaspoon of black pepper. Whisk until well combined.

Wash and cut the bell peppers into 1-inch pieces, slice the zucchini into 1/2-inch thick rounds, and cut the red onion into wedges.

In a large bowl, add the bell peppers, zucchini, red onion, and cherry tomatoes. Pour the marinade over the vegetables and toss until evenly coated. Let them marinate for at least 15 minutes.

While the vegetables are marinating, soak wooden skewers in water for 10 minutes to prevent burning.

Thread the marinated vegetables onto the skewers, alternating between different types of vegetables for variety.

Once the grill is ready, place the vegetable skewers on the grill. Cook for 10-12 minutes, turning occasionally, until the vegetables are tender and have grill marks.

Remove the skewers from the grill and let them rest for a couple of minutes. Sprinkle with fresh parsley before serving.
