Grilled Seitan with Rosemary and Garlic

Tender seitan grilled to perfection, marinated with rosemary and garlic for a burst of flavor.

Ingredients

  • 1 pound seitan
  • 2 tablespoons fresh rosemary
  • 4 cloves garlic
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1 medium red bell pepper
  • 1 medium zucchini
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons fresh parsley

    In a medium bowl, combine 3 tablespoons of olive oil, 2 tablespoons of lemon juice, minced garlic (4 cloves), 2 tablespoons of chopped fresh rosemary, 1 teaspoon of sea salt, and 1 teaspoon of black pepper. Whisk until well mixed.

    Slice the seitan into 1-inch thick strips and add them to the marinade. Ensure the seitan is well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

    While the seitan is marinating, prepare the vegetables. Slice the red bell pepper and zucchini into 1-inch pieces, and set aside.

    Preheat your grill or grill pan to medium-high heat (about 400°F). If using a grill pan, lightly oil the surface to prevent sticking.

    Remove the seitan from the marinade, allowing excess marinade to drip off. Thread the seitan and vegetables onto skewers, alternating between seitan, bell pepper, and zucchini pieces.

    Place the skewers on the grill. Cook for about 5-7 minutes, turning occasionally, until the seitan is heated through and has nice grill marks.

    Remove the skewers from the grill and drizzle with 1 tablespoon of balsamic vinegar. Let rest for a few minutes.
