Instructions
- 1
Preheat your grill to medium-high heat (about 400°F).
- 2
In a small bowl, mix together the sour cream, chopped dill, juice of half the lemon, minced garlic, salt, and black pepper. Set aside to let the flavors meld.
- 3
Pat the salmon fillets dry with paper towels. Brush both sides with olive oil and season with salt and pepper.
- 4
Place the salmon fillets skin-side down on the grill. Grill for 6-8 minutes, then carefully flip and grill for an additional 4-6 minutes, or until the salmon flakes easily with a fork.
- 5
While the salmon is grilling, prepare the vegetables. Toss asparagus and cherry tomatoes with olive oil, salt, and pepper.
- 6
In the last 5 minutes of grilling, add the asparagus and cherry tomatoes to the grill. Cook until the asparagus is tender and the tomatoes are slightly blistered.
- 7
Remove the salmon and vegetables from the grill. Let the salmon rest for a few minutes.
- 8
Serve the grilled salmon topped with the dill sauce and garnish with fresh parsley and lemon wedges on the side.
