
Grilled Pineapple with Mint & Coconut Sugar Caramel
Sweet grilled pineapple slices drizzled with a mint-infused coconut sugar caramel for a tropical treat.

- 1 whole pineapple
- 1 cup coconut sugar
- 1 cup fresh mint
- 2 tablespoons lime juice
- 2 tablespoons coconut oil
- 1 teaspoon sea salt
- 1 cup water
- 1 teaspoon vanilla extract
- 1 teaspoon lime zest

Preheat your grill to medium-high heat (about 400°F).

Cut the pineapple into 1/2-inch thick slices and remove the core.

In a small saucepan, combine the coconut sugar, water, lime juice, and sea salt. Heat over medium heat, stirring until the sugar dissolves.

Once the mixture starts to simmer, reduce the heat to low and let it cook for about 10 minutes until it thickens slightly, stirring occasionally.

Remove the saucepan from heat and stir in the fresh mint, vanilla extract, and lime zest. Let it steep for 10 minutes, then strain the caramel to remove the mint leaves.

Brush the pineapple slices with coconut oil on both sides.
