Grilled Pineapple and Tofu Skewers
Delightful skewers of marinated tofu and grilled pineapple, served with a spicy dipping sauce.
Ingredients
- 14 oz firm tofu
- 1 fresh pineapple
- 1 cup soy sauce
- 2 tbsp lime juice
- 3 cloves garlic
- 1 tbsp fresh ginger
- 1 tsp red pepper flakes
- 8 vegetable skewers
- 2 tbsp olive oil
- 1 tbsp cilantro
- 1 tsp salt
- 1 tsp black pepper

Press the tofu for 20-30 minutes to remove excess moisture. Cut the tofu into 1-inch cubes.

In a bowl, mix together the soy sauce, lime juice, minced garlic, grated ginger, red pepper flakes, salt, and black pepper to create the marinade.

Add the cubed tofu to the marinade, ensuring all pieces are well coated. Let it marinate for at least 30 minutes, or up to 2 hours in the refrigerator.

While the tofu is marinating, cut the fresh pineapple into 1-inch chunks.

Preheat your grill or grill pan to medium-high heat (about 400°F).

Once marinated, thread the tofu and pineapple chunks alternately onto the vegetable skewers.

Brush the skewers lightly with olive oil to prevent sticking.

Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the tofu is golden and the pineapple is caramelized.

Remove the skewers from the grill and let them cool for a minute. Garnish with chopped cilantro before serving.
