
Grilled Mahi-Mahi with Mango Salsa
Succulent grilled mahi-mahi topped with a fresh and zesty mango salsa, perfect for a sunny Caribbean lunch.
Ingredients
- 4 fillets mahi-mahi fillets
- 1 large mango
- 1 small red onion
- 1 cup cilantro
- 2 tablespoons lime juice
- 1 small jalapeño
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 large avocado
- 4 pieces lime wedges

Preheat your grill to medium-high heat (about 400°F).

In a small bowl, mix together 2 tablespoons of olive oil, 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 teaspoon of garlic powder.

Brush the mahi-mahi fillets with the olive oil mixture on both sides.

Place the mahi-mahi fillets on the preheated grill and cook for 4-5 minutes per side, or until the fish flakes easily with a fork and has nice grill marks.

While the fish is grilling, prepare the mango salsa. Dice the large mango, small red onion, and small jalapeño (remove seeds for less heat). Chop 1 cup of cilantro.

In a medium bowl, combine the diced mango, red onion, jalapeño, cilantro, and 2 tablespoons of lime juice. Mix well and season with salt to taste.

Once the mahi-mahi is cooked, remove it from the grill and let it rest for a couple of minutes.

Slice the large avocado and set aside.

To serve, place the grilled mahi-mahi on a plate, top generously with mango salsa, and add avocado slices on the side.

Garnish with lime wedges and serve immediately.
