
Grilled Mackerel with Potato Salad
Fresh mackerel grilled to perfection, served alongside a vibrant potato salad with herbs and mustard dressing.
Ingredients
- 4 fillets mackerel fillets
- 1.5 pounds potatoes
- 1 cup parsley
- 2 tablespoons mustard
- 4 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 small red onion
- 2 tablespoons capers

Preheat your grill to medium-high heat (about 400°F).

Wash and scrub the potatoes. Cut them into even-sized chunks.

Place the potatoes in a pot, cover with cold water, and add 1 teaspoon of salt. Bring to a boil over high heat.

Once boiling, reduce heat to medium and cook for about 15-20 minutes, or until the potatoes are tender. Drain and let cool.

While the potatoes are cooling, prepare the mackerel. Brush each fillet with 2 tablespoons of olive oil and season with salt and black pepper.

Grill the mackerel fillets for about 4-5 minutes on each side, or until the fish is cooked through and flakes easily with a fork.

In a large bowl, combine the cooled potatoes, chopped parsley, diced red onion, and capers.

In a small bowl, whisk together the mustard, remaining 2 tablespoons of olive oil, lemon juice, and a pinch of salt and pepper.

Pour the dressing over the potato salad mixture and toss gently to combine.
