  • 8 oz tempeh
  • 4 cups arugula
  • 1 cup cherry tomatoes
  • 1 whole lemon
  • 3 tbsp olive oil
  • 1 cup fresh basil
  • 1 cup fresh parsley
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 cloves garlic
  • 1 tbsp balsamic vinegar
  • 1 small red onion

    Prepare the marinade: In a bowl, whisk together the juice of 1 lemon, 2 tablespoons of olive oil, minced garlic (2 cloves), chopped fresh basil (1 cup), chopped fresh parsley (1 cup), salt (1 tsp), and black pepper (1 tsp).

    Slice the tempeh into 1/2 inch thick slices and place it in the marinade. Ensure all pieces are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

    While the tempeh is marinating, prepare the salad: In a large bowl, combine arugula (4 cups), halved cherry tomatoes (1 cup), thinly sliced red onion (1 small), 1 tablespoon of balsamic vinegar, and the remaining 1 tablespoon of olive oil. Toss gently to combine.

    Preheat your grill or grill pan to medium-high heat (about 400°F).
