
Grilled Lamb Chops with Mint Chimichurri
Tender grilled lamb chops served with a fresh mint chimichurri sauce, perfect for BBQ gatherings.
Ingredients
- 8 pieces lamb chops
- 1 cup fresh mint
- 1 cup olive oil
- 3 cloves garlic
- 1 tablespoon red wine vinegar
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons lemon juice
- 1 teaspoon red pepper flakes
- 1 cup fresh parsley

In a small bowl, combine 1 cup of olive oil, 1 cup of fresh mint (chopped), 3 minced garlic cloves, 1 tablespoon of red wine vinegar, 1 teaspoon of salt, 1 teaspoon of black pepper, 2 tablespoons of lemon juice, and 1 teaspoon of red pepper flakes. Mix well to create the mint chimichurri sauce. Set aside.

Preheat your grill to medium-high heat (about 400°F).

Season the 8 pieces of lamb chops with salt and black pepper on both sides.

Once the grill is hot, place the lamb chops on the grill and cook for 4-5 minutes on one side.

Flip the lamb chops and grill for an additional 4-5 minutes for medium-rare doneness (internal temperature of about 135°F). Adjust cooking time according to your preferred doneness.
