
Grilled Eggplant with Smoky Tomato Relish
Sliced eggplant grilled to perfection and topped with a rich smoky tomato relish for a flavorful bite.
Ingredients
- 1 large eggplant
- 4 medium tomatoes
- 1 teaspoon smoked paprika
- 3 tablespoons olive oil
- 2 cloves garlic
- 1 tablespoon balsamic vinegar
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon fresh basil
- 1 ounce feta cheese

Preheat your grill to medium-high heat (about 400°F/200°C).

Slice the eggplant into 1/2-inch thick rounds. Sprinkle salt on both sides and let them sit for 15 minutes to draw out moisture.

While the eggplant is resting, prepare the smoky tomato relish. Dice the tomatoes and finely chop the garlic.

In a medium bowl, combine the diced tomatoes, garlic, smoked paprika, olive oil, balsamic vinegar, salt, and black pepper. Mix well and set aside.

Rinse the eggplant slices under cold water to remove excess salt and pat them dry with paper towels.

Brush both sides of the eggplant slices with olive oil. This will help them grill nicely.
