Instructions
- 1
In a small bowl, combine the thyme, rosemary, minced garlic, olive oil, lemon juice, salt, black pepper, paprika, and honey to create the marinade.
- 2
Place the Cornish hens in a large resealable plastic bag or a shallow dish. Pour the marinade over the hens, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, or overnight for best flavor.
- 3
Preheat your grill to medium-high heat (about 375°F to 400°F). If using a charcoal grill, prepare the coals until they are covered with white ash.
- 4
Remove the hens from the marinade and let excess marinade drip off. Discard the marinade.
- 5
Place the Cornish hens on the grill, breast side down. Grill for about 15 minutes, then flip and grill for an additional 15-20 minutes, or until the internal temperature reaches 165°F and the juices run clear.
- 6
Once cooked, remove the hens from the grill and let them rest for 5-10 minutes before serving.
- 7
Serve the grilled Cornish hens with your choice of sides, such as grilled vegetables, rice, or a fresh salad.
